Chocolate Flour less Cake
Serves 21
Unsalted Butter 1 Ib 480 g
Dark or Milk Chocolate 810 g
Eggs Separated 20 each
White Sugar 7 oz 210 g
Powder Sugar As Needed
Melt that butter, and chocolate over a bain marie.
Please whisk the egg whites into the well melted chocolate
Yum Yum.
WhipWhipWhip the egg whites til shiny dumpin sugar whip til
stiff peaks form. Fold in the chocolate. Dump the complete batter
in a fully sized hotel pan lined w parchment paper.
Bake at 400 F that's hot for 10 min tone down the temp to
350 F continue to bake for 4o min more. Use a Knife or toothpick
to test the doneness of the cake.
Now invert the cake onto the back of a metal sheet pan.
Cool down fully man then dust w powder sugar.
